Fanny Bay and Copperpenny Distilling Co. hosting collaborative pop-ups this spring

A series of pop-ups featuring fresh oysters and craft cocktails will be happening at an award-winning North Shore distillery this spring.



Copperpenny Distilling Co. will welcome tide-to-table destination Fanny Bay Oyster Bar and Shellfish Market to host a new series of Sunday Shucking Pop-Ups. Happening on March 22nd, April 12th, May 10th (Mother’s Day) and May 31st, the events will help bring together oyster aficionados and cocktail enthusiasts alike.

At each event, Fanny Bay master shucker Hannah Nguyen will serve up premium oyster varieties and seasonally inspired Shucker’s Choice selections for $21 a half dozen or $39 a dozen. As for drinks, the Copperpenny bar team will offer a curated menu of gin-based libations created especially for the occasion.

The events will also serve as a showcase for Copperpenny’s BC Food and Beverage Product of the Year winning and first-of-its-kind-in-Canada No. 006 Oyster Shell Gin, handcrafted using shells harvested from the rocky shores of the restaurant and shellfish market’s eponymous oyster farm in Fanny Bay on Vancouver Island. The rare gin expression uses BC ocean elements during the distillation process to create a wonderfully savoury gin with bright citrus notes ideal for martinis and seafood pairings.



Back in December, Copperpenny Distilling Co. won big at The Spirits Business Global Gin Masters 2025. They brought home a pair of gold medals for its Lost Horizon Rare Tea Gin and another for its Ember BC Pine Smoked Gin. Lost Horizon also grabbed the gold medal in the Contemporary Gin category at the Artisan Distillers Canada 2025 Canadian Artisan Spirit Competition in April of 2025.

Lost Horizon Rare Tea Gin is a beautifully contemporary dry gin that incorporates a rare loose leaf Ceylon tea as the leading botanical note which imparts orange blossom and vanilla notes. Tannins from the tea leaves deliver a beautiful, rich brown hue and complex body. Their award-winning Ember BC Pine Smoked Gin is born from the wild mountains of BC and is made with select BC wheat and a thoughtful blend of locally foraged and European juniper.
