Aside from the usual mountain fare, Whistler has a rich culinary scene – and there’s a new spot serving up authentic French-Canadian cuisine that’s calling your name.



Lorette Brasserie, located inside the Summit Lodge Boutique Hotel by Paradox, celebrates French culture & Québécois cuisine in a unique setting like no other in Whistler.

The space is run by the Paré Restaurant Group, which also runs Whistler hotspots Caramba and Quattro. A true family affair for co-owners Jay Paré and his nephew James Paré, the 90-seat brasserie is named in honour of Jay’s mother (James’ grandmother), as well as James’ mother.

Start your meal with their delicious Ahi Tuna Tartare before diving into the indulgent Beef Tartare & Bone Marrow – a bold dish that’s perfected with black garlic, cured egg yolk & burnt onion lavash.

The Salmon Rillettes are also another must try that’s served on crostini. Other stand-out dishes include the Petits Pois à la Française, Beef Cheek Bourguignon, which melts on your fork, and the Smoked Wild Halibut.

“The food at Lorette evokes a deep sense of nostalgia in me,” says Executive Chef Sluchinski. “It’s the kind of hearty, home-spun cuisine I was raised on. Some of my fondest food memories are of spending time with my grand-mere and sharing in her passion for providing sustenance and comfort through cooking, so I’m excited to pay homage to her and the classic recipes and traditions for which French and French-Canadian fare is so beloved.”



All of their dishes can be paired nicely with a drink thanks to their extensive wine list that champions Old and New World varietals from acclaimed vineyards in France as well as ones located in BC’s own backyard. Their drink menu also feature cocktails like the signature “Frozen Vesper” (Citadelle Jardin d’Ete, Grey Goose, Lillet blanc, lemon caviar).

After finishing your meal, you don’t need to travel far to relax! Being located inside the award-winning Summit Lodge makes planning for an overnight stay that much easier.
