One-night-only dinner experience in Vancouver puts BC’s best ingredients in the spotlight

This September, the Pacific Institute of Culinary Arts is hosting a special dinner that puts on a spotlight on ingredients in BC and beyond.

Happening on Thursday, September 3rd, “A Taste of Canada” Pop-Up Dinner will showcase ingredients from Pacific Northwest farmers, foragers and fishers.



The four-course, chef-led and student-executed dinner will celebrate the regional flavours and homegrown ingredients of BC and beyond. The menu will feature dishes such as bannock with cultured local honey butter, duck confit croquettes with pickled BC blackberries, BC mussels with smoked bacon and cider, Montreal-smoked BC bison, pan-seared Pacific lingcod with sweet corn velouté, and more.

Young food enthusiasts have one final opportunity to sharpen their culinary skills during the Pacific Institute of Culinary Arts (PICA) Summer Cooking Camp from August 31 to September 4. Led by professional chef-instructors, our hands-on experiences bring cooking and baking to life through creativity, collaboration, and plenty of fun in the kitchen.

Each day offers a new culinary adventure, from mastering knife skills and creating a Mexican fiesta-inspired menu to making fresh pasta, exploring baking techniques, and discovering flavours from around the world.
