An iconic Whistler restaurant is celebrating spring with a new four-course feast that showcases their award-winning authentic Italian cuisine.

Quattro, located inside the Pinnacle Hotel, has introduced a new $40 four-course feast that’s now available until late June.

Their new spring menu gives aficionados of home-spun Italian recipes a taste of iconic dishes and seasonally inspired fare at a reasonable price, with Quattro’s regular nightly menu also featured throughout the season.

Appetizers include Stuzzichini (Crispy Parmesan Polenta), Smoked Albacore Tuna (pickled spring radish, tonnato, capers), and Bisque di Granchio di Dungeness(Dungeness crab bisque, limoncello crema) to name just a few of their dishes.

For your second course, choose from dishes such as Risotto Agli Asparagi (spring asparagus, walnuts, tomato and olive oil succo), Fusilli Tartufati (local wild mushrooms, truffle cream, sage, Pecorino), and Branzino al Pistacchio (Chilean seabass, fava bean and asparagus vignole, yuzu butter).

Cap off your Italian dining experience with one of the three following options: Budino alle Nocciole (hazelnut pudding, mandarin jelly, honeycomb, dark chocolate), Panna Cotta Agli Agrumi (citrus, pistachio, amaretti) or Cannoli (lemon ricotta and pistachio).

Wine pairings showcasing standout Old and New World varietals are also available for an additional $39 per person to enhance the flavours of their limited-edition menu.

Quattro is owned and operated by the Paré Restaurant Group, which is also behind popular casual European restaurant Caramba, and the new French-inspired Lorette Brasserie restaurant that’s set to open inside the Summit Lodge Boutique Hotel by Paradox later this month.
